Salad made easy.

Ingredients

Dressing
2 tbsp (30 mL)olive oil
1 tbsp (15 mL)lemon juice
1 tsp (5 mL)honey
salt and pepper to taste
Salad
1 pkg (250 g)halloumi cheese (President's Choice is one widely available brand)
mixed greens
2 cups (500 mL)thawed mango

Directions

  1. Slice cheese crosswise into 8 pieces, and fry in a dry skillet over medium heat until golden, about 2 minutes each side.
  2. Place on a bed of mixed greens and top with mango. Drizzle dressing over salad and sprinkle with finely chopped green onion.
